There are a lot of pretty changes happening at Disney’s Caribbean Beach Resort these days. We visited Sebastian’s Bistro restaurant, located next to the amazing pool here, on its opening day and it was a delicious treat with a surprise ending. There’s also a brand new lobby at the resort and the renovated quick service area looks like somewhere I need to eat soon. Back to Sebastian’s though. In addition to the bright, coastal interior the restaurant also has a tropical outdoor bar and dining area you don’t need reservations for.

You might notice as you’re reading along we ate vegan on this outing but I was eyeing the crab cake on the appetizer menu. For an appetizer we ordered the Marauders Snack. This is a tasty little dip platter with tostones, arepas, and house made crackers and black bean hummus, guacamole, and pico de gallo. This is one of the best guacs I’ve ever had and this appetizer alone would get me back at the restaurant.

I ordered the Caribbean Vegetable Curry and was so glad I did. It was the perfect mix of vegetables, flavors and textures. The cilantro rice was excellent, I loved the cauliflower and the crunchy pieces on top just made the meal. So, so good and now one of my favorite vegan meals at Walt Disney World.

Surprise! As we were wrapping up our meal Illuminations fireworks began and sparkled right through the window at us. The view wasn’t like California Grill and the music didn’t play in the restaurant but my party was pleasantly surprised. This was such a nice treat and I had no idea you’d be able to see these fireworks from here. If this is part of the draw for you, we sat near the front of the restaurant and had a great view from there. Any window near the water at the front of Sebastian’s Bistro should give you a decent view of Illuminations but mention it to your seating host if a good view is a must.
